After seveal dessert workshops, time to take on a savory dish. 

This cooking workshop will feature one of the all-time favorite proteins, chicken (le poulet). Le poulet basquaise (Basque-styled chicken) is a symbolic traditional dish of Basque cuisine, and by extension, also becomes gradually a part of French cuisine.

The Basque Country (le Pays basque) refers to the home of Basque people, located in the Western Pyrenees, straddling the border between France and Spain. That's where our featured star-dish comes from.

Le poulet basquaise is chicken braised in piperade - another marvellous culinary invention from the Basque region. This sauce, which tastes as good as it looks, is usually made of red and green sweet peppers, tomatos, onions, garlic, oliver oil, white wine and chili peppers. The ingredients may vary according to tradition and tastes but in all its variation, the colours of the sauce will reflect the Basque flag (red, green and white). This is a hearty and warming dish to be shared and enjoyed in autumn and winter.
