is a specialty of Bordeaux since the ancient time, and it is widely available in French pastry. This little cake from Bordeaux has a soft and mellow dough with the flavour of vanilla and rum.

The history of canelé can be traced back to the 18th century, the nuns of the Annociades convent in Gironde invented it. They recovered flour from the holds of boats and used it to make canelés. Initially, it was a small cake of thin dough rolled around a cane stem and fried in lard. In 1790, the nuns were expelled from the convent. It was not until 40 years later that the recipe was taken up again under the name Milasson. This pastry was baked in a fluted bronze mould. The recipe was then improved over time. Nowadays, canelé is an emblematic product of Bordeaux.

A little anecdote: Canelé was originally written with two "n", but the second "n" was removed when the Confrérie du Canelé was created on 24 March 1985.
