  • 250 grams of walnuts
  • 5 eggs
  • 180 grams of sugar
  • 100 grams of cornstarch
  • 1 pinch of salt
  • 5 cl of strong coffee


For the glaze:

  • 2 or 3 tablespoons of strong coffee or coffee extract
  • 170 grams of icing sugar
  • A few walnuts for decoration

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Grind the walnuts finely in a food processor.
  3. In a large bowl, cream together the sugar, vanilla sugar, egg yolks, and water until light and fluffy.
  4. In a separate bowl, whip the egg whites with salt until stiff peaks form. Gradually add the sugar and continue whipping until the meringue is glossy.
  5. Gently fold the ground walnuts into the egg yolk mixture.
  6. Carefully fold the meringue into the walnut mixture until just combined.
  7. Pour the batter into a greased and parchment-lined 20 or 25 cm (8 or 10 inch) round cake pan.
  8. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool completely in the pan before removing it.
  10. To make the glaze, combine the coffee or coffee extract with the icing sugar until smooth.
  11. Pour the glaze over the cake and decorate with walnuts.
